Short Bio
Dr. Yee Ming Lee is an Associate Professor and the Tony and Libba Rane Endowed Professor in the Horst Schulze School of Hospitality Management at Auburn University. A Registered Dietitian (RD) and Certified Hospitality Educator (CHE), she holds degrees in Dietetics (University Science Malaysia), Nutrition (Texas Woman’s University), and a PhD in Human Ecology with a focus on Hospitality Administration (Kansas State University). Before academia, Dr. Lee worked as a Clinical and Foodservice Dietitian in Singapore and Malaysia, managing patient services and providing nutrition counseling. Her research spans food safety, food allergies, consumer behavior in healthy food choices, and nutrition/hospitality education. She has published over 50 peer-reviewed articles and completed more than 75 research presentations at national and international conferences. Professional Experience
Dr. Yee Ming Lee currently serves as an Associate Professor in the Horst Schulze School of Hospitality Management at Auburn University, a role she has held since October 2018. Prior to her current position, Dr. Lee was an Assistant Professor in the Department of Nutrition, Dietetics, and Hospitality Management at Auburn University from August 2012 to September 2018.Her academic journey includes serving as a Graduate Research Assistant in the Department of Hospitality Management and Dietetics at Kansas State University from January 2009 to May 2012. She also held multiple roles at Texas Woman’s University, including Graduate Teaching Assistant in the Department of Nutrition and Food Science (August to December 2008 and January to May 2008), Student Assistant in the English Department (January to May 2008), Graduate Research Assistant in Nutrition and Food Science (August 2007 to May 2008), and Student Assistant in Marketing and Communication (March to December 2007). Before transitioning to academia, Dr. Lee Besta Foodservices in Kuala Lumpur, Malaysia (January 2005 to June 2006), and as a Clinical Dietitian at Alexandra Hospital in Singapore (June to December 2004).
Innovation
Dr. Yee MingLee’s research centers on enhancing health, well-being, and quality of life through translational, collaborative studies in food safety, food allergies, and healthy food selection. Her scholarship also includes pedagogy-focused research aimed at advancing teaching excellence. To date, she has served as lead author or co-author of 51 peer-reviewed articles and delivered 78 conference presentations at regional, national and international venues. Her work appears in top-tier, indexed journals such as the International Journal of Hospitality Management, International Journal of Contemporary Hospitality Management, and Food Control, among others. She has also contributed to journals focused on teaching best practices, including the Journal of Culinary Science and Technology and the Journal of Teaching in Travel & Tourism. Additionally, her research collaborations extend internationally through partnerships with scholars from Brazil, China, Egypt, India, and Malaysia, resulting in several joint peer-reviewed publications. Dr. Lee has demonstrated strong grantsmanship, securing multiple internal and external awards for collaborative, interdisciplinary projects. The quality and impact of her scholarship are further evidenced by several research awards.
